!About the wine

The champagne with the famous name is a blend of Pinot Noir and Chardonnay. While the percentages change from vintage to vintage, the wine is always based on these two key grape varieties.
The wine immediately shows a rich, powerful and structured presence. Juicy notes dominate, quickly being overpowered by aromatics. The palate develops: generous, structured, and precise. It then contrasts with vibrating notes of spice and pepper. The energy is sustained and transitions to a sparkling, minerally aftertaste.

Dom Pérignon is the name of the champagne, not the winery that produces it. It actually represents a prestigious vintage - a cuvée, or tête de cuvée, which is the top champagne produced by a given producer. The respected Champagne house created Dom Pérignon in the 1920s as its best vintage.
Each bottling of Dom Pérignon contains grapes from only one year, showing the unique characteristics of the vintage. The brand does not produce wines that have not aged.
There are years in which there is no harvest at all. The current cellar master, Richard Geoffroy, will only produce and release vintages that will be over 20 years old. As a rule, it produces no more than six harvests each decade.

The percentage is usually between 50/50 and 60/40 in favor of one of the two. It is aged in bottle for at least 7 years before its release, and some editions are aged even much longer.

*Helpful serving tip - never try to remove the foil from around the wire rack of Dom Pérignon. The bottle uses a traditional antique foil that should stay in place on the bottle. Instead, pull the plug through the foil and remove the wire as if the foil were not there at all.
